Roy Choi is renown in Los Angeles where he whips up dishes for Kogi, a fleet of fusion food trucks. His culinary creations have been featured in publications, such as Bon Appétit and Food & Wine, and showcased on numerous TV shows. But Roy’s interest in cuisine was slow in coming.
Even though Roy’s family owned a Korean restaurant, he wasn’t inspired to create in the kitchen until he was 25 years old. While watching the Food Network one day, he saw New Orleans celebrity chef Emeril Lagasse at work and was motivated to tie on an apron.
Roy graduated from the Culinary Institute of America Institute and worked at several restaurants before teaming up with Kogi co-founders Mark Manguera and Caroline Shin Manguera. His Mexican-Koran-inspired food truck dishes were an immediate hit with Southern Californians. He has offered his patrons everything from Kogi dogs and “L.A. Gas Station Tacos” to Oxtail Soup with Daikon and Ramen Noodles and Spam-and-Kimchi Musubi, which combines seared Spam, sushi rice and pureed kimchi in nori (edible seaweed).
