A popular chef on the LA food truck scene is Erwin Tjahyadi, commander of the Komodo food truck. Combining French cuisine with Asian fusion, Erwin’s Komodo truck is in demand at catered events and on the street serving hungry city dwellers.
After graduating from cooking school, Erwin apprenticed with top chefs and then launched Komodo with his brother, Eric, and a small group of business partners.
Komodo trucks troll the streets serving hungry customers; but like most other food truck operators, about half of the company’s business comes from private catering. And like many successful food trucks, Komodo recently opened a bricks-and-mortar take-out (with a limited seating) in LA. The menu includes dishes similar to what is served from the food trucks.
Komodo is best known for dishes that feature the flavors of the Pacific Rim. Customers can choose from salads, sandwiches, tacos or skewers, as well as Garlic Fries (mild garlic flavor in crispy fries) and Truffle Fries (sprinkled with parmesan). Komodo refreshes in the drink department with unique selections ranging from lychee lemonade to passion fruit green tea.
